Espírito Santo is the largest conilon coffee producer in Brazil, responsible for between 75% and 78% of the national production. It accounts for up to 20% of the world's robusta coffee production. Conilon coffee is the main source of income in 80% of Capixabas rural properties located in hot lands. It is responsible for 35% of Agricultural GDP. Currently, there are 283 thousand hectares os conilon planted in the State. There are 40 thousand rural properties in 63 municipalities, with 78 thousand family’s producers. The conilon coffee generates 250 thousand direct and indirect jobs. The State is a Brazilian and worldwide reference in the development of conilon coffee cultivation, with an average productivity that has already reached 35 bags per hectare (bags / ha). Many producers that counts with more technology, have managed to harvest more than 100 sc / ha. Productivity has evolved a lot in the last 25 years, thanks to the technologies developed. The production of specialty conilon began around 2007, when small producers began to prepare small lots to participate in municipal and regional competitions. Generally, as it happens with arabica coffee, the best coffees are produced at higher altitudes. The conilon in the State of Espírito Santo is produced at sea level altitudes up to 550m, and today seeking to improve the quality, the producers are planting conilon in higher altitudes, We can now find plantations up to 750 meters altitude, places which were once cultivated only for Arabica coffee plantations. Most of the producers invested in coffee peelers, better patios, dryers, storage bins, among others, thinking of improving the final quality of their coffee. It is always observed the correct point of harvest, harvesting only when the fruits were at the apex of maturation. The coffee is shaded in the middle of the plantation and it’s transported to be processed on the same day avoiding undesirable fermentations.
